Leeks are not very popular in our latitudes, but in Europe they are very loved and appreciated. This vegetable can be prepared in all sorts of ways: steamed, fried, baked, used in first courses and as a filling for pies. In addition, leeks are inexpensive and completely does not harm the figure. Restaurant chefs unanimously call it the king of onion soups: leek really has a very mild aroma and delicate taste. It is a hundred times more tender than onion and will never make anyone cry.

Finding leeks in a supermarket or market is not difficult: they are present almost everywhere. But choosing a good one is not at all easy: the stems should be very elastic, with snow-white, still wet rhizomes and bright dark green leaves. It is better to choose thinner onions (try to buy stems less than 4 cm thick) and approximately the same size, so it is more convenient to cook. An exception is if you are making a salad: with this everything is much simpler. By the way, green salads with leeks - fresh, crispy, juicy - turn out excellent, even in the coldest winter brings the smell of approaching spring. For this “spring” salad, cut the onion into rings, tear into pieces the leaves of lettuce, iceberg or other green varieties you like, season with vegetable oil with all kinds of fresh herbs and white balsamic vinegar or lemon juice. An even better dressing for this salad is sour cream, cream or unsweetened yogurt. Then the taste becomes more delicate. You can use more than just raw onions to dress your salad.

In general, leek loses some of its charm if you boil it in water. That's why best cooked steamed: keep the stems in a water bath for five to seven minutes. It also turns out delicious if you lightly fry it over olive oil and add to meat, poultry or fish dishes. An excellent option for breakfast is scrambled eggs on an onion “pillow”. It looks especially impressive if you take only green leaves, without white stems, and add a little turmeric to the omelette for a rich yellow color. Believe me, such a sunny omelette on a green “pillow” will incredibly lift your spirits in the morning!

And here, if you like, is a classic French recipe for making “poor man’s asparagus,” as leeks are called in that country. Just bake it in the oven and top it with grated hot cheese and breadcrumbs.

Store leeks in the vegetable compartment of the refrigerator for no more than five days. And boiled food becomes harmful already on the second day after cooking. But how useful it is in its fresh form! This versatile vegetable is very rich in vitamins B and C, it contains a lot of iron, calcium and phosphorus, as well as some essential oils, which improve blood circulation and heart function.

It is completely in vain that many people use the white part of the stem - it is the most tender and delicate. Green leaves not only look appetizing, but also rich in carotene. The big advantage of leeks is that they grow all year round, therefore it is always available fresh, “from the garden”, regardless of the season. But since leek grows in the ground, it must be washed thoroughly. It's best to soak.

Rinse the leeks well. If the leg is more than 5 cm in diameter, cut it in half lengthwise. Then place the leaves in an enamel bowl, add water and put on fire. Blanch (boil) for no more than 5-7 minutes, drain in a colander, and cool. Twist the leaves of the chilled leek (each plant) around the stem and place in an enamel pan. Pour in cold water, adding for every 3 liters of water 3 tablespoons of salt, 2-3 medium heads of garlic, 2 small red beet roots, cut into 4-5 pieces or strips. At the end, add 100 ml of 9% table vinegar to this amount of brine. After 10 days, the leek is ready to eat.

Wash the onion thoroughly. Place in an enamel pan. Add chopped red bell peppers and 1 medium carrot. Pour water, cook for 20-30 minutes. The end of cooking is determined when the leek leaves are easily kneaded with your fingers. Drain everything in a colander and cool.

While the onions are cooling, prepare the seasoning:

  • 3 cloves of garlic,
  • 1/3 pod of hot pepper.

Grind all this in a coffee grinder or pass through a meat grinder. Mix the crushed mass with 0.5 cups of 9% table vinegar and 0.5 tbsp. spoons of salt.

Cut the cold boiled leeks into small pieces and mix thoroughly with the seasoning. When serving, sprinkle with chopped parsley.
