Today we will try to cook not just cottage cheese sweets, but cheesecakes with oatmeal in the oven. The calorie content of such a dish will be minimal, because we will not fry in a frying pan in large quantities butter, but the benefits will increase thanks to cottage cheese and oatmeal. WITH step by step photos made specifically for the article, this recipe will be easy to implement.

How to cook cheesecakes with oatmeal without flour in the oven

The cottage cheese will become softer and more homogeneous, which is good for our dough, if you knead it a little. Use a regular masher. You can add sugar immediately.

Now mix the cottage cheese with the egg and stir well, whisking is not necessary. The dough should be like this - with small lumps (from cottage cheese).

In our recipe, oatmeal serves as a flour substitute, so you should grind it to fine crumbs and then add it to the main mass. Let's not forget about baking powder. The resulting curd dough should be left to brew in a warm place - the flakes should swell. 30-40 minutes is enough for this, sometimes it is recommended to increase the time (1-2 hours) so that the flakes can better combine with other ingredients. In addition to oatmeal, you can add a few tablespoons of semolina to the dough to increase its volume. Another way to use flakes in dough does not involve grinding them: you need to pour boiled water over them for a certain time, which is also required for swelling and softening. In the latter case, the dough will be more liquid.

We form cheesecakes from the dough no more than 1 cm thick. Since we do not use flour, it will be easier to sculpt them if you lightly wet your palms with water.

Grease their tops with butter before placing them on a baking sheet. The container for the cheesecakes also needs to be generously greased (you can use sunflower oil), and it’s even better to additionally use parchment paper, otherwise they may burn.

To make golden oat cheesecakes without flour, they need to be placed in a preheated oven for 30 minutes at 160 degrees.

Cool the finished curds a little and sprinkle powdered sugar. This dessert goes well with jam, condensed milk or sour cream. Everything is ready, please come to the table!

Cheesecakes are a very nutritious and healthy curd dish. It is ideal for breakfast and also for a light dinner. Due to the fact that this dish contains a very high content of cottage cheese, it is much healthier than regular baked goods.

At the same time, many people love cheesecakes, even children. In order for this dish to be less calorie, more healthy and safe for our figure, it is advisable to cook it without flour. You can replace flour in recipes with healthier oatmeal or add semolina. The taste and nutritional properties of cheesecakes will only benefit from this.

Recipe for cottage cheese pancakes without flour and semolina

Bowl, spoon, knife, plate, frying pan with lid.

How to choose cottage cheese for cheesecakes

  • Since the basis of cheesecakes is cottage cheese, the final result of the prepared dish depends on its freshness and taste; it should be as fresh as possible and not very sour. If the cottage cheese is too sour, you will have to add more sugar, and this will deprive the cheesecakes of their curd flavor and have a harmful effect on our figure. When choosing cottage cheese, give preference to cottage cheese white, dense, but quite soft.
  • Pay attention to production times. Cottage cheese that is too dry is not very suitable for making cheesecakes, although it can also be used if you first grind it through a sieve and dilute it with sour cream or milk. Cottage cheese that has too much moisture will force you to add more dry ingredients, then the cheesecakes risk becoming rubbery and losing their fluffiness.
  • The ideal option for making cheesecakes would be cottage cheese with 5-9% fat content, slightly sour and moderately moist.

Step-by-step preparation

  1. Grind 400 grams of low-fat cottage cheese into a bowl.
  2. Cut 5-6 dried apricots and 2 tablespoons of dried cranberries into small cubes.

To the cottage cheese add chopped dried fruits, 2 grams of dry stevia, 1 teaspoon of vanilla sugar, 2 tablespoons of coconut or rice flour and break 1 egg.

  3. Mix all ingredients until a homogeneous curd mass is obtained.
  4. Now you can form the cheesecakes.

Place 2 tablespoons of coconut or rice flour into a plate for breading. We form small cheesecakes and bread them. To ensure that the cheesecakes are the same size, I recommend using a tablespoon or an ice cream scoop.

  5. Grease a heated frying pan with 2-3 drops of vegetable oil.
  6. Place the cheesecakes on the frying pan and press down a little so that they lie tightly on the surface of the frying pan. Cover the pan with a lid and cook for about 3-4 minutes over very low heat.
  7. Turn the cheesecakes over to the other side and cook for another 3-4 minutes. closed lid on the lowest heat possible.

Dear friends! Watch a short video with a recipe for diet cheesecakes. You will see how convenient it is to form cheesecakes with an ice cream spoon.

Cooking time: 35-40 minutes.
Number of servings: 9-12 cheesecakes.
Kitchen appliances and accessories: fork, bowl, spoon, silicone muffin tins, oven.

  1. Mix in a bowl 200-250 grams of cottage cheese of any fat content, 150-160 grams of sour cream, 30 grams of softened butter and 2 chicken eggs. It is not necessary to beat the curd mass with a blender. Simply mash it with a fork.
  2. In a separate bowl, mix 70 grams of semolina, 60-70 grams of sugar, 1 teaspoon of baking powder and the same amount of vanilla sugar.
  3. Pour the prepared dry ingredients into the curd mass and mix thoroughly until smooth. Leave the curd mass at room temperature for 15 minutes so that the semolina swells well.
  4. Fill the baking molds 2/3 full with the curd mixture. The cheesecakes will rise slightly during baking. It is very convenient to use silicone muffin tins for baking cheesecakes.
  5. We bake the cheesecakes in a preheated oven for 25-30 minutes at a temperature of 175-180 degrees. This cheesecake dough must be baked in the oven. It is not suitable for frying in a pan because it turns out to be very liquid.
  6. Take the cheesecakes out of the oven and let them cool slightly. When they cool, they will fall off a little. This is normal, this is how it should be. Serve the finished cheesecakes to the table.

After watching this video recipe, you will see what molds are needed for baking cheesecakes and how golden brown they turn out.

Cooking time: 10-15 minutes.
Number of servings: 12-14 cheesecakes.
Kitchen appliances and accessories: fork, bowl, spoon, frying pan with lid, spatula.

  1. Grind 200-220 grams of medium-fat cottage cheese and 1 egg with a fork.
  2. Add a pinch of salt, 1 teaspoon of baking powder and ¾ cup of finely ground oatmeal. We do not add all the flakes at once, but a little at a time. You may need less or more of them, depending on the moisture content of the cottage cheese.
  3. Using a fork, mix all ingredients. The result should be a soft, viscous mass that slightly sticks to your hands. We wet our hands in cold water and form small balls from the resulting mass, which we then press into a flat cake.
  4. Heat the frying pan and grease it with 15-20 milliliters of vegetable oil. Place the cheesecakes in a frying pan and fry over low heat so that they do not burn and are well cooked.
  5. When one side is browned, turn the cheesecakes over, cover the pan with a lid and fry until done.

Since there is no sugar in the recipe, this dish should be served with honey or jam.

recipe

  • If your cheesecakes burn on top but remain raw inside, pay attention to their size and thickness. Cheese pancakes that are too thick will not bake well and will most likely remain raw inside.
  • Very large cheesecakes are difficult to turn over in a frying pan. A regular tablespoon or ice cream scoop will help you determine standard size cheesecakes. The most ruddy and beautiful crust of cheesecakes comes out if you fry them in a frying pan with a thick bottom with a non-stick coating. You need to fry them over low heat, covering the top with a lid, so they will come out more fluffy and be well baked inside.
  • You can serve cheesecakes with honey or jam. You can sprinkle with powdered sugar and decorate with fresh berries. It’s very tasty to pour condensed milk or melted chocolate over cheesecakes.
  • Try making cheesecakes in the oven. Baked, they come out very fluffy and tender. You can very easily prepare cheesecakes in a slow cooker. I often add banana instead of sugar to the curd dough for cheesecakes.
  • Banana adds its sweetness and goes very well with cottage cheese. Everyone in my family loves cheesecakes with banana, they turn out very tasty. A friend recommended me a recipe for Lviv cheesecake. This dessert is worth making. I will be waiting for your comments.

Recipe for dietary cottage cheese pancakes with raisins

To prepare delicious dietary cheesecakes in the oven, you will need egg yolks. First, separate the whites from the yolks. Mix the yolks with honey, beat and add oatmeal. Leave the mixture for about 5 minutes.

Add low-fat cottage cheese to the mixture, mix with a spoon. You can also use a potato masher to bring the mixture to a more uniform consistency.

Add the washed raisins to the curd mixture. In the oven, the raisins will increase in size and become juicier. Choose light raisins for the recipe, they are sweeter than dark ones. A pinch of vanilla will improve the aroma of the dish, giving it a delicate trail and a lasting aroma. And if you add another pinch of soda, the diet cheesecakes with raisins will turn out more fluffy and airy.

Mix the mixture well, and if it comes out a little runny, you can add a little more flakes. Wheat flour can also be added, but in this case the cheesecakes are dietary, so it should not be included.

Line the pan with parchment and lightly grease with olive oil. Using wet hands, form approximately 8-9 large cheesecakes from the curd mixture. Place them in the mold so that they are “free”.

Bake at 220C for about 20-25 minutes on the middle shelf of the oven. No need to turn over.

Serving: hot, can be supplemented with low-fat yogurt, fresh berries or fruits. Green or black tea is suitable for drinks. And if this is breakfast, then a cup of delicious invigorating coffee will not be superfluous.
