  • flour – 200 g;
  • fresh or frozen raspberries – 400 g;
  • low-fat cottage cheese – 400 g;
  • baking powder – 1 tsp;
  • butter – 100 g;
  • vanillin – 2 pinches;
  • powdered sugar - for decoration.

How to cook a tender jellied pie with cottage cheese and raspberries

There are no difficulties in preparing a jellied pie with an original tender, melting layer of curd mass with raspberries.

  1. First of all, you will need to prepare all the necessary ingredients to prepare a delicious and tasty jellied pie.

  1. First you need to make the dough. It will become the basis of baking, since you will need to form some kind of basket out of the mass. To do this, the flour is sifted through a sieve. Baking powder for the dough is introduced into it, everything is mixed. Granulated sugar is also added to the composition. The mixture is diluted with chilled butter, previously cut into small pieces.

  1. The resulting composition is ground into crumbs, after which an egg is introduced into it. Everything must be stirred immediately with a whisk or fork.

  1. The dough should be kneaded very quickly. The resulting mass must be rolled into a ball.

The layer must be pierced in several places with a fork. The workpiece is sent to the oven for 15 minutes and baked at 180 degrees.

  1. In the meantime, you need to make the filling. To do this, sour cream, vanillin and sour cream are mixed in a deep plate. The mixture is diluted with granulated sugar. An egg is introduced into it.

Ingredients:

Dough:

  • Kefir, unsweetened - 1 tbsp.
  • Soda - 1 tsp.
  • Eggs - 2 pcs.
  • Refined vegetable oil - 100 gr.
  • Flour - 1-1.5 tbsp.
  • Vanilla extract - 1 tsp.
  • Sugar - 65 gr.

For filling:

  • Cottage cheese - 400-500 gr.
  • Starch - 1 tbsp. l. (if necessary)
  • Egg - 1 pc.
  • Sugar - 2 tbsp. l.
  • Cherries, frozen cranberries - 1 tbsp.

Glass 250 ml

Preparation:

Pour kefir (yogurt, other fermented milk) into a bowl and add soda. Stir and leave for 7-10 minutes. Kefir will react with soda and foam.

Add eggs, sugar, vanilla extract and a little flour, mix. Pour oil into the dough and mix. If required, add more flour. The dough should look like thick sour cream.

Prepare the curd filling. Add egg and sugar to the cottage cheese to taste. Blend the mixture with an immersion blender until smooth. Add berries, mix. We do not defrost the berries first, so as not to crush them when stirring. The filling is ready.

Place 1/3 of the batter into a Gugelhupf cake tin (with a hole in the middle). Flatten and spread all the curd filling. Pour the remaining dough on top. If you are using a regular round pan, then divide the dough into 2 equal parts. Cover everything with the remaining dough and bake in a preheated oven at 190-200 degrees for 50 minutes.

Remove the finished jellied pie with cottage cheese from the oven and let it cool slightly. Place the cake on a plate and, if desired, sprinkle with powdered sugar. Serve cooled.

But the dough... I wanted something lighter for the summer, really...
And I also wanted to take part in Olya’s flash mob “I’m cooking from supplies” and from my supplies I had a couple of bags of cherries, I also found half a duck, a bag of carrots, puff pastry and...And that's it. Since there are several packages of cherries, let’s start with it!

Light dough...I thought for a long time. I settled on cottage cheese.
150 g cottage cheese
50 g sugar
60 g milk
50 g vegetable oil
200 g flour + tbsp for sprinkling
2 teaspoons baking powder
Knead the dough and put it in the refrigerator for an hour.

I took out the cherries in the evening, defrosted them a little, then put them in a colander and pressed them on top with a plate with a weight - I do this to remove excess juice. It's not really needed in the pie....


By morning the juice was separate, and the cherries were separate. Juice for fruit drink, berries for pie!
Making a "fill"
It’s standard for me - one day, having found mine, I stopped experimenting...
300 g thick sour cream
2 eggs
3 - 4 tbsp sugar
vanilla sugar
3 tablespoons starch (corn or potato)
Beat everything with a mixer until smooth.

After an hour, take out the dough, take a suitable form, grease it, sprinkle with flour.
Roll out the dough and flatten it in the mold, making fairly high sides.


Lay out the berries (I used cherries, but you can try any other berry!)
Fill it with filling (oil, yeah))) and send it to a preheated oven.


Let me clarify - this is for a 26 cm mold, for 22 cm, reduce the products by 1/3. The shape is desirable with detachable sides.
I bake in MY oven at 190 degrees for 40 minutes. I take it out, let it cool, and only then take out the pie. Why IN MY? And I got the feeling that the thermometer was lying to me... So look - focus on your oven.

Jellied (lazy) kefir pie with onion and egg in the oven

Jellied (lazy) kefir pie with onion and egg, cooked in the oven - a great option for a summer dinner. And as you cook, I’ll tell you how to replace the onions with onions and get the opportunity to pamper your family delicious dish all year round.


Ingredients:

  • kefir (diluted sour cream, yogurt will perfectly replace it) - 1 cup;
  • eggs (2 for dough and 5 hard-boiled);
  • flour - a little more than one and a half glasses;
  • baking powder (according to instructions);
  • green salad onions - 2 bunches;
  • half a bunch of dill if desired;
  • butter - about 50 g (it must be left warm so that it becomes soft).

Preparation:

First we make the filling. Cut the sorted and washed green onion feathers into pieces about 1 cm long. You can add dill for a brighter taste, then chop that too. Mix and add salt. Then take a potato masher and slightly mash the greens in a bowl so that they become juicier under the influence of salt.


Add chopped hard-boiled eggs there and spread melted butter. Mix everything, season with salt and pepper.


No green onions? Take onion. Chop 3 large onions, put them in a colander, pour boiling water over them and immediately pour cold water over them. Simmer in a frying pan under a lid until transparent. Its taste will be practically indistinguishable from a fresh feather.

Now it's time for the test. We put its components (flour, kefir, eggs, baking powder) into one bowl at once. Add a little salt and mix thoroughly until you obtain a smooth mass with the consistency of thick sour cream.


If you don't have baking powder, you can take baking soda (at the tip of a teaspoon). It is not necessary to extinguish with vinegar; sour kefir will do this.

Grease a baking sheet with butter and “powder” it with semolina. Pour half of our dough into the bottom. Carefully place all the filling on top of it and fill it with the other part of the dough. Place in a hot oven for at least 40 minutes.


While the baked jellied pie is still hot, grease it with kefir or butter so that the crust becomes soft. Let's cut it up and call the family.


Jellied (filled) kefir pie with cabbage “Guests on the threshold”

When friends suddenly decide to visit you and you only have an hour to spare, the situation with a treat will be saved by the kefir pie with cabbage “Guests on the Doorstep”. Moreover, fiddling with it will take a minimum of time - such is the peculiarity of this baking. Moreover, the pie will turn out great - it will go away quickly and “hurray.”


Ingredients:

  • 250 ml kefir (natural yogurt, sour milk);
  • cabbage - a small fork;
  • 3 eggs (1 for dough, 2 for filling);
  • a little more than half a glass of flour;
  • baking powder - half a spoon


Preparation:

Chop the cabbage finely, salt well, rub with your hands to soften. And 15 min. simmer in a frying pan, adding a little water. Let cool.


Mix flour, kefir, egg and baking powder with a mixer. You want the dough to resemble medium thick sour cream.


If, for example, you are at the dacha and don’t have a mixer at hand, don’t worry. The dough can be mixed using a regular fork.

Separately, beat 2 eggs until slightly foamy.

We grease the mold with vegetable oil and begin to “assemble” the future pie in it. Pour in some of the dough and place the prepared cabbage on top in an even layer.



Carefully place the remaining dough on top and level with a spoon.


And put it in a hot oven for about half an hour. The aromas will crawl around the apartment like crazy. Believe me, it has been tried more than once!

Kefir jellied pie with canned fish

A rehash of the previous recipe, suitable as an “emergency culinary aid”, will be a kefir pie with canned fish. It’s great if you have a jar of mackerel, sardines or pink salmon in oil in the refrigerator. This is what you need!


Ingredients:

  • 250 gram glass of kefir;
  • about 2 glasses of flour;
  • a little baking soda;
  • canned fish - 1 can;
  • 2 raw eggs;
  • green onions - a few feathers.

There is a royal version of this pie - with sprats. And honestly, considering how inexpensive a bunch of other products are, why not sometimes?

Since the filling was made for us here, preparing the dish turns into the simplest one-step process: just beat the dough.

Using the usual movements, pour kefir into a bowl, break eggs, soda, add salt and stir in flour. We need to get a thick, viscous, but still liquid mass.

Line the pan with parchment and pour half of the dough onto the bottom. Place the fish, mashed with a fork, on top and distribute the rest of the dough on top. And - bake in the oven for at least 40 minutes. Decorate the cooled pie with green onion rings.

A simple and delicious recipe for kefir jellied pie with cottage cheese and apples

Now let's learn how to cook sweet liquid pies. These are already desserts that go well with tea, coffee, milk or cocoa. First we have a simple but very tasty recipe for kefir pie with cottage cheese and apples. The most delicate thing, from which you will not be able to pull children and men by the ears.


Ingredients:

  • 1 glass of kefir;
  • half a glass of sugar for the dough and 2 tablespoons for the filling;
  • half a pack butter(soften at room temperature);
  • flour - 2 cups;
  • baking powder for dough (according to instructions);
  • 3 eggs (2 for dough + 1 for filling);
  • 300 grams of cottage cheese;
  • 3 large apples (preferably non-acidic varieties);
  • vanilla sugar.

Preparation:

Beat 2 eggs with sugar with a mixer until grains of sand can no longer be felt.

Pour in kefir, add flour, baking powder and vanilla sugar. Continue beating for about 5 minutes. The finished dough should be like a thin cream - smooth and shiny.

Transfer the mixer to a bowl, where we put the cottage cheese, add a raw egg and sprinkle in the rest of the sugar. We also beat the mixture so that the cottage cheese becomes homogeneous.

Vary the fat content of the cottage cheese. Slender girls can take the low-fat one, and for hungry schoolchildren it’s also suitable from the market.

Grate the apples on a coarse grater and sprinkle lemon juice and send it there, into the filling. Mix thoroughly.

And again, we put three layers into the mold onto parchment. The bottom and top are dough, and in the middle there are apples with cottage cheese.

Do not press the filling too deeply into the dough, as this may prevent the bottom layer from rising properly.

The pie bakes for 40-50 minutes. Take it out and sprinkle powdered sugar on top.

Lush sweet kefir pie with jam

Another simple dish, called simply gingerbread by housewives, is a sweet jellied kefir pie with jam. It is so pleasant and easy to prepare that even a schoolgirl can make it.


Ingredients:

  • half a glass of sugar;
  • kefir - 1 glass;
  • jam (raw jam) - 250 ml;
  • 2 eggs;
  • soda - 1/3 tsp;
  • flour (sifted) - 2 heaped glasses.

Preparation:

In a mixer bowl, first beat the eggs with sugar. We introduce the remaining products there one by one. Knead into a homogeneous, flowing, thick dough. Pour into a baking tray lined with paper and bake for 50 minutes.
